How to Make sourdough Using Water kefir grains

Making your own Sourdough is fun and easy and using your spare water kefir grains is a great way to use them up. As we start heading into the warmer weather its always good to have lots of ideas for your extra grains.

The first thing i have to do is give credit to our good friend Elaine who gave us the recipe for this.

This sourdough loaf will have a lovely crisp crust and even crumb texture and flavour and is incredibly easy to make. 

Make your own sourdough with water kefir

Day 1 
180g strong wholemeal flour
150ml water
2 tbsp water kefir grains
Mix together to form a thick batter. Cover and leave at room temperature overnight.

Day 2 
The batter should be a bit bubbly. Feed with 60g strong wholemeal flour and 60ml water. Cover
and leave overnight again.

Day 3 
500g strong white flour
1/5 tsp salt
120-150ml water
Mix together these ingredients with all of the batter to make into a dough. The amount of water
you need will depend on the absorbency of the flours you have used. Add 120ml first and if needed
add more to get the right consistency. Knead by hand or in a stand mixer then cover and leave at
room temperature for an hour, then place in the fridge overnight.



Day 4 Bake !
Bring the dough back to room temperature for an hour or so then turn out and shape into 1 large
loaf or 2 smaller ones. Leave to rise for 45 mins / 1 hour then bake at 200 degrees for 30-35 mins.

and Voila one amazing loaf of Sourdough made with water kefir grains.
