Elderflower herb has traditionally been taken for hay fever, allergies and to boost the function of the respiratory system and its subtle taste can be a lovely accompaniment to kombucha or on its own.
Elderflower works best with a light flavoured tea (green or white) and is idea as a change to your traditional kombucha receipes.
It can also be drunk as a herbal infusion which is nice hot or iced.
To make a lovely elderflower herbal infusion or tea use one to two teaspoonfuls of dried rubbed herb to a cupful of water. Either make as a traditional tea or, to gain maximum strength, place the petals in a saucepan, pour on the water, cover with a lid and simmer gently for approximately ten minutes before straining.
Alternatively you can simply add the herbs to your second ferment.
